cookwitholiveri: Lentil and Rice Tacos

I was wondering what I could do with the bag of dried green lentils in my cupboard when I found this recipe for lentil and brown rice tacos. The recipe is super easy to follow and it is a budget friendly pantry meal! You probably already have everything you need. I edited the recipe just a bit as you can see below.

In a small amount of oil, cook until fragrant:

  • 1 diced onion
  • 5 cloves of minced garlic

Sprinkle with:

  • 2 Tbsp flour

 Stir and immediately add:

  • 1 cup of lentils
  • 1/2 cup of brown rice
  • 5 cups of water
  • 1 tsp of red pepper flakes
  • a sprinkle of white pepper
  • a sprinkle of chipotle pepper
  • a dash of cayenne pepper
  • 2 tsps cumin
  • sprinkle of salt and pepper

Bring to a simmer over medium-high heat and simmer, stirring often, until the desired consistency is achieved.  (About 50 minutes.)

That’s it! Let it simmer! I added just a bit more water towards the end as things were thickening up too quickly.
