Asian Mustard Potato Salad

Ingredients

Directions

  1. Chop the potatoes into small chunks, boil until they slide off of a knife when poked, drain and rinse with cold water
  2. Finely chop the celery, onion, and asian greens – add to bowl
  3. Stir in 4 tbsps of mustard and 4 tbsps of mayo (add more as needed)
  4. Add the now cooled potatoes, salt and pepper, and more mayo and mustard if it is dry
